Paneer Mutter

Paneer-200gms
Mutter-1cup
Onion -2thinly sliced
Gingergarlic paste-1tsp
Tomatoes-2 pureed
Jeera pwd-1/4tsp
Chillypwd-2tsp
Turmeric pwd-1/2tsp
Garam masala-1tsp
Salt-as req
Oil-as req
Coriander leaves- few  chopped

                                Heat oil in a pan and fry the cubed paneer .Saute the onions,ginger garlicpaste  till the raw smell goes add the all powders and saute till raw smell  goes.Remove from the stove and allow it cool.Make a smooth paste of the cooked mix in a grinder.Pour it to the pan along with tomato puree ,cook on low flame. Add mutter and salt close the lid and cook for some time now add the fried paneer also .Garnish with coriander leaves . delicious paneer mutter is ready .Serve it with roti ,paratha or pulaav.

Potato Smileys


Potato-1 big boiled
Cornflour-4tbsp
Cheese grated-3tbsp
Chilly pwd-1/2 tsp
Salt-as req
Oil-for frying

              Grate the boiled potatoes .Add corn flour,cheese ,chillypwd and salt and make it to dough.Keep aside for half an hour .Heat oil in a pan ,make small balls from the dough and flatten it in to small rounds.Make eyes using straw and mouth using a spoon .Fry it and serve it with sauce.
Your children will love it :) :)

Beef Cutlet


Minced beef -200gms
Onion-1big
BoiledPotatoes-2big
Ginger-small piece
Garlic-4pods
Chilly pwd-1/2tsp
Pepper pwd-1tsp
Garam masala-1tsp
Turmeric powder-1/4tsp
Salt -as req.
Meat masala-1/2tsp
Oil-as req
Egg-1
Bread crumbs


           Marinate the minced beef with turmeric powder and salt.and cook it ina pressure cooker.Heat oil in a pan  .Saute chopped onions,ginger& garlic till onions become translucent.Add chilly pwd ,pepper pwd garam masala ,meat masala saute on low flame .Add the minced meat to the pan and mix well.Mash the bolied potatoes and add it to the pan .Mix well and cook on low flame .cook for 5mins and remove from the stove and keep it aside to cool.Make small balls and flatten the mix on your palm and dip in the beaten egg and coat in the bread crumbs and fry .
Tasty cutlets are ready .Serve it with sauce .

Paneer Cutlet


Paneer-1 cup grated
Potato boiled -2 big
Onion -2 sliced thinly
Green chilly -2 or 3
Gingergarlic paste -1 tsp
Eggs-3 beaten
Breadcrumbs -2 cups
Oil - as req
Salt -as req
Pepper powder-1 tsp

Heat oil in a pan  and saute the  onions  and green chilly for 2 mins .Now add ginger garlic paste nd cook for some time . Mean while mix the grated paneer and mashed potatoes .Add salt  and pepper powder to it .Add this mix to the pan  and cook for 5 mins  on a low flame Remove the pan from   the stove and let it cool .Roll the mix  into  rounds or logs or oval shape.Dip each cutlet in beaten egg and then roll in bread crumbs. Heat oil in a kadai  and deep fry  cutlets .

Yummy Paneer Cutlets are ready .you can serve it with ketchup .

Varutharacha Fish Curry

Fish -1/2 kg
Shallots -100 gms
Garlic pods -5 or 6
Ginger - 1 piece
Curry leaves – 1 or 2 stems
Chilly Powder -3 tbsp
Coriander Powder -21/2 tbsp
Turmeric Powder -1 teaspoon
Pepper powder - ½ tsp
Salt – as required
Grated Coconut - ½
Oil - 1 ½ cup
Tamarind-small lemon size(soak nd make paste )

Cut the fish in to small pieces and marinate the pieces with some chilly powder ,turmeric powder coriander powder ,salt ,& pepper powder .leave it aside for 5 minutes.
Fry the grated coconut along with some coriander powder till it turns brown,.Heat oil in a kadai and saute, ginger,shallots,curry leaves & garlic pods . Add balance curry powders to it and cook for a minute .Add the marinated fish along with half cup of water to this and cook for half an hour. Close the kadai tightly .
Now grind the fried coconut into a fine paste in a mixie , (Usually we do it in arakallu ),After half an hour add this coconut gravy with 1 cups of water and tamarind paste  to the cooking fish & mix it well .Cook on a low flame .You can turn of the gas .when the oil is seen on top .

Aloo Paraatha


Whole wheat flour - 2 cup
 Salt -1/4 tsp
 Oil -2 tsp
 

 For the Stuffing

  Potatoes- 1 big or 2 medium size
  Green chillies -1-2 finely chopped
  Cumin seeds - 1 tsp
  Coriander leaves -fistful (finely chopped)
  Garam masala - 1/2 tsp


In a bowl, add 2 cup of wheat flour, salt, oil, needed water and prepare a soft, smooth, pliable dough. Grease your hands with a tsp of oil and knead the dough well. Cover and keep it aside for 15-20 minutes.

Pressure cook potatoes for 3 whistles or until soft. Peel the skin and mash it well. Add chillies, cumin seeds, garam masala powder, salt needed, coriander leaves and mix well. Now your stuffing is ready.

Make small balls with the dough and ro ll it into a small circle .Place a tbsp of  stuffing of the dough and  gather all corners and sela  the dough   and flatten it gently .Heat a tawa and place the rolled out dough.When small bubbles forms on the surface, apply a tsp of oil and flip it the other side.Spread a little oil on the other side also and cook both sides well until golden brown spots appear.Remove from tawa after both the sides are cooked well. Serve with curd or chutney

Pudina Chutney



Pudina leaves -2 cups
Pepper powder-1/2 tsp
Salt-as  req
Garlic-2 or 3 pods
Ginger-smallpiece
Tamarind –a small sizeball
                             Grind all the ingredients in a mixer in to a fine paste .Pudina chutney can  be served with  parathaas.
